BIG CANOE!! Departure from home// Arrival at 282 Oak Barrel Hollow

What an awesome, much needed girls weekend! I slept in a tad bit, got an Insanity workout in, got ready, packed the rest of my things, and Amber and the girls picked me up about 12:45ish Friday. Connie even dropped off some Biscotti and Banana Bread.. so yummy!




We got everything packed in the car.. uumm I think someone thought she was going with.. got on down the road and we were there in about 2 1/2 hours. This drive was NOT bad at all.. What awesome company and us girls could have made our own record with all that singing we were doing.

Amber sure does know how to pick a cabin. 
It. Was. Gorgeous.
Right down to every little detail.
Seriously I wanted to get to work today on bringing some all of this inspiration to our house!

After checking out this awesome cabin, getting everything unloaded, we took a trip to the local store for our remaining grocery items. 


The girls had fun with their Mardi Gras masks!


We got back to the house, relaxed by the fire, read magazines, books, whatever our little hearts desired. 


We soon started on dinner and desserts.. Amber in charge of dinner and yours truly in charge of the sweets. I have never had one bad thing from Amber's mad chef skills and it sure didn't change in the mountains. 
She whipped up a dip for us to snack on, dinner was Cheesy Zucchini Enchiladas-- oh. my. word. Delicious-- 



Sooo, that left The Ultimate Margarita Pie.

I leave you for now with this recipe.

1 (8 oz) package cream cheese, softened
2 packages dry margarita mix
2/3 cup sugar
1 (8 oz) carton frozen whipped topping (thawed)
1 (9 inch) graham cracker crust


Beat cream cheese until fluffy. Combine cream cheese, margarita mix, and sugar; mix until smooth. Gently fold in whipped topping. Spread into crust, and freeze until ready to serve.


 Extra: Garnish with lime slices or sprinkle a few crushed pretzels on top to give it a hint of salt.



I actually left the whipped topping at home so this pie actually was two packages of cream cheese and a little whipping cream to try and give it that whipped texture. OOPS!!

Maybe this coming fall or early spring (before baseball gets in full swing), we can have everyone up to Blue Ridge for the weekend! Oh what a fun trip to have everyone together for!
