Weekend Shenanigans.. At Home

Happy Monday all!

What a mostly rainy weekend here in the Peach State and you know what that means.. mostly a lazy, relaxing weekend.
Work was pretty crazy last week, which is fine with me, but it is killer on my back! Especially when I feel like something is out of place on my right side and I am constantly reminded of it by this throbbing pain I have going on. That will hopefully be taken care of this afternoon at my chiro appointment and I could not be more excited!
With all that being said Friday night was meant for me to spend in the jet tub soaking in a hot bath.. you know the kind that the water is SO hot you have sweat beads on your face and your skin looks like a lobster? Yes, it was quite amazing. And it helped me feel a little better at work Saturday. The last of the proms around these parts. 



Afterwards, I came home to Coach working on his boat. 

Wax on. Wax off. 



I seriously think he did this 3 times. He said it was just disgusting. 
I walked outside at one point and it looked like somebody was ready for a boat ride.

I did also make a yummy recipe out of the crockpot. I decided it had been put up long enough since this dinner was a fail.

Thankful Thursday



Y'all have to know by now that I LOVE my puppies.. 

LOVE THEM.

They bring so much joy to Coach and I and are constantly making us laugh with the silly things they do. I wish at times we were able to get into their minds and just see exactly what they are thinking.

Every day when I come home from work the first thing I do is come in and let Mara and Kylee out of their kennels and watch all three sprint out the back door, all while trying not to get ran over by any of them. They are always so excited like they haven't seen you weeks! Last Tuesday, Kylee really did not sprint at all and when she finally made it out the door she winced when her paws hit the ground.
She came back inside and seemed fine so I thought maybe she was just landed wrong or something. The next day, she still was a little slow moving, wasn't jumping around like normal, hunched back, stayed to herself up under one of the kitchen chairs, very abnormal, so what did I do? 

I panicked.

I was calling the emergency vet line.. facebook messaging friends who are employees at the vet trying to get answers on what could possibly be wrong with my little Bugs! The vet called me back and told me it sounded like she had injured her back to give her a Benedryl to hopefully relax her a bit and let her be. She ate her dinner and was drinking water so those were all good signs.

We finally made it to the vet's office the next day and of course, like some children probably do in the doctor's office, made a complete liar out of me and was ALL over the place like nothing was wrong. During her examination, the vet explained that their adrenaline pumps so much while they are there they can block out the pain and not show any signs of where it may be coming from.

Great. 

Scared to death.
Wore herself out from fighting.


They even did a couple of X-rays, I feel sorry for those techs trying to handle that little lady, and came back with some news that she may possibly have a fracture in her neck. I think my upper lip broke out in sweat beads from panic and MY adrenaline started pumping. BUT, they did another one just in case and it came back normal. 

PRAISE THE LORD! 

They did recommend her going into a halter instead a regular collar to take some of the stress of her neck just in case. Final diagnosis?? --She could have taken a wrong leap off the bed or one of the bigger pups we could have stepped on her. Not meaning to but just playing rough outside or possibly got her when they all go flying out the door. I will admit Kylee has had some dust rolls in her time here on the farm. 

A big FAT vet bill later, two different meds, strict orders to no jumping, no chasing squirrels, and mostly kennel 'bed rest', we were on our way home! Bless her heart, she wanted to be so excited to be on a car ride but her body just wouldn't let her. 

Today, she has started being back to her old young self again and I am loving it!


Yesterday morning she had some quality time with her sisters! This makes me so happy since she has been keeping to herself. 
Notice Sox's old bed is back since she decided to get a little dirty than normal outside a couple days ago. No gettin' the new bed nasty!

My little grey-beard sweet girl. I can't believe how much grey she is getting. She has been my little cuddle buddy for so long now! I know she will be back full force before long and when she is I have GOT to get her on video when she gets the zoomies. 

It. Is. Hilarious.

Can't wait for her to get fully well and so thankful it wasn't anything worse!

Weekend Shenanigan's

How was everyone's weekend? 

Mine was pretty low key and that was just fine with me! We all need those weekends right? 
This Saturday will be the fourth one in a row that I have worked and I can say that I am ready for a WHOLE weekend off! 

Without further ado let's get to it!









1-- Friday night after work I stopped by Amber's for a visit. Sass was missing me and she finished off the night with avocado facials. Her Dad, as always, was a good sport. Love love this family!
2-- It's prom time and here is one of my favorite styles I have recreated. There will be more this Saturday too.
3-- Reppin' the Dodgers at the gym.. 
4-- Tried a new recipe and used my awesome apple slicer for the first time! BTW the apples were DELISH!
5-- Sox LOVES her new orthopedic bed I surprised her with. Check out that wagging tail.
6-- A great stroll in the pasture Sunday to spend some time with Trio. What a beautiful day it was. Can't wait to give this fat boy a bath. Stay warm weather!!
7-- Perfect quote. No one is perfect. 
Learn to forgive, forget, and move forward.
I guarantee you will be a stronger couple in doing so.

Stove-Top Baked Apples

Last night Coach and I cooked out on the grill which got me in the mood to try something new in the kitchen. 

Sometimes these adventures turn out good and sometimes they turn out disastrous.
With everything being pretty healthy- grilled chicken and asparagus - I found this sweet dessert/side dish to satisfy my sweet tooth. 

It was a success on the first try YAY! and we couldn't get over how DELICIOUS they were!
I will definitely be making them again. I even turned down the page in my cook book.

Try them for yourself!


1 cup water
2 tablespoons butter
1/2 cup sugar
1/8 teaspoon salt
2 firm green apples, unpeeled, quartered


In medium skillet, combine water, butter, sugar, and salt. Heat until boiling; boil 2 minutes before gently putting apple wedges in, skin side down. Continue cooking apples, dipping liquid over apples as they cook. Turn occasionally. Cook until apples are tender and juice has thickened, 5-8 minutes. May add a dash of cinnamon, if desired. 




I added a little cinnamon too!

Spring has Sprung on the Front Porch!


Spring Fever hit a couple of weeks ago and I wanted to take our fall-ish porch and add a little bit of life to it! 
It was time for some color!

Every now and then I will go check out the barn for any 'new' things I may can spot. There are so many old but really neat items there that I can spruce up and decorate the house with. It just fits perfectly with old house and the farm feel. 

I have really been loving the chair idea with a plant in the seat..

Sooooo guess what I found out in the barn??


It was perfect and the cushion/seat had already been taken off.. this is exactly how I found it.
I cleaned it up a bit and then Mrs. Connie came over and we got started with the chicken wire.. she molded it and then started stapling to the underneath part of the chair. 



Finished with the wire!

I got out one of my favorite things --paints-- decided on a color and got to it!
Red is one of my favorite colors but we have a red door and I also wanted a color that would stand out. 

Turquoise it is.



We had a 4-legged helper too. 

Silly girl.

I picked this up at home depot..

Shredded the edges for a not-so-perfect look..

Added soil and this beautiful Begonia plant for the completed look.

I potted these when this fun porch project first started. 


I got these birdhouses from Mrs. Connie's inventory.
And here is the completed look!

Next project is for another wreath since the birdies around here have helped themselves to this one.

Hopper Wedding.. First Dance

Our First Dance is one of my most cherished moments from the wedding. 

The first time being introduced as "Mr. and Mrs." and sharing that special moment like we were the only two in the room.

Yummy Protein Pancakes

You may already follow Tiffany and Whitney over at He and She Eat Clean so you may have already seen this recipe they posted a few days ago on a healthy protein pancake recipe. 
I knew I HAD to try!

I LOVE carbs.. If I want to go for a cheat meal it's definitely going to have something to do with breads or pastas. 
Just. So. Yummy.

I tried them last week for the first time but tried it again this morning and today they were sooo much better than the first batch I made. 
I doubled the recipe for Coach and I, and we had two pancakes each, (it doesn't sound like much but they are definitely filling), I added some fruit, and used Cary's Sugar Free syrup.





1/2 banana
2 egg whites
1/2 cup quick cooking oats
1/2 tsp pure vanilla

Blend all the ingredients in a blender.
Spray griddle with olive oil.
Add pancake batter and cook 2 minutes.


Calories- 217
Protein- 12g 
Carbs- 34g
Fat- 3g


Sooo yummy and we will definitely be having more of these around the Hopper house!
I wonder how many more times I can say the word yummy?



A little spoiling...

I definitely am blessed to have one of the most amazing women in my life.
You have heard me talk about her before.. Yup you guess it, Amber.


She and the girls certainly did spoil the heck out of me last night for my birthday get together!
I met up with her yesterday afternoon just in time to get the girls from school and then we headed back to her place for a fun afternoon of girl time!
Amber just wanted me to relax and enjoy her marvelous cooking. 
I am serious when I say she can cook the mess out of some food. I should really be at her house every night when she cooks so I can take some lessons. We have even jokingly talked about setting up a video camera and recording her teaching me how to cook. Now THAT should be hilarious! 
Hey I would watch it.

She made an awesome appetizer that I couldn't get enough of and for dinner we had her famous Chicken Enchiladas! 
those. things. are. heavenly.
She even sent some home with me and I may share with Coach. 
wink.wink.

For dessert I got surprised with these oh so good cupcakes and the Happy Birthday song!


Strawberry with Chocolate icing. After the enchiladas I could only do one but I really just wanted to smash my face in another one.

The girls made me sweet sweet cards..


And I LOVE my gift!



And Amber says a southern porch isn't complete without a fern!
She even had a little chat with him and told him he had to survive for me!
Around here I can't even keep cactus alive. Yes I totally just admitted that.


Sass even gave me a coupon to the So Chic Salon where I cashed in after dinner and got a mani and a pedi! So relaxing! 


And the night's not complete without a little snuggle time from Georgia AKA Fatty Boo Boos..

Who did you say again was at Sanford Stadium??

Sometime last year, in the midst of all the wedding planning, my mother called and asked did I want to go see Jason Aldean at Sanford Stadium.
I told her yes if she could spot me a ticket at the moment and THEN I COMPLETELY FORGOT ABOUT IT I mean seriously there was a lot going on until a couple of months ago. 

Well yesterday was THE DAY!!!

How often is it do you get to see Jake Owen, Luke Bryan, and Jason Aldean in one of your favorite places just 25 minutes down the road?? 

It was absolutely ROCKIN'!!

And guess who else made an appearance???
Kelly Clarkson.. well she sordove was there.. holographically AND

LUDACRIS!!!!

I seriously almost swallowed my gum when he walked out on stage rapping. It was lodged in the back of my throat! Took me a couple of seconds to recover but hey, that's OK!
I wish I could've gotten a decent picture but my phone wasn't cooperating with me and he was moving all over the place.
