BIG CANOE.. The Big Hike & Stranger Danger!!

What a busy week y'all! I didn't mean for this post to take so long going live.. I do apologize.

Saturday being at Big Canoe we decided to get our hike on. This was my first official hike! We did 4.7 miles of beautiful scenery and 700 feet of that was straight up, "enter at your own risk", kinda hike. Holy smokes on that last part. 
Calves, quads, hammies, glutes.. ON FI-YAH.

Here's a little recap....









This little cabin was right past the bridge where we started.









I thought this was pretty cool. I must admit The Last of the Mohicans soundtrack was playing in my mind. Ha.

Aaaaand the 700' rise begins...


We stopped here and enjoyed half of our awesome PB & J's.

Sometime after those stairs, we stopped here and had the other half of our PB & J's.. and started making our way back down the mountain. 



OK. So I tried not too drink too much water because I have THE smallest bladder in the world.. but I really couldn't help but to drink some because I was sooo thirsty. So what does that mean? Ashley had to pop a squat behind a log. 
Not too long after this, Amber and I hear, "HEELLOOOOO!!" We both jumped out of our skin and screamed and there was a man jogging down the mountain.
STRANGER DANGER!
we were having a convo in the car on the way to the cabin and I told Amber how funny 'stranger danger' sounded to me. Guess I am just silly. Our phrase on the mountain when we met someone was just this..
I don't know where this jogger came from but I hope he was spared of seeing my backside! And if he would've came jogging up on me relieving myself I seriously would have DIED!! Amber said she would have had to bury me right there under that log and that is the TRUTH!
And kudos to that man jogging because these two adult chicks were walking only.
  




WE MADE IT!

We were still eating Sass's dust.

After getting back to the cabin, showering and getting some relaxation on the porch by the fire pit we started on dinner.
And I have to share another recipe with you guys! It is sooo yummy.

Raw Brownies and Chocolate Avocado Frosting
I originally found it here.

You will need::

Ingredients:

for brownie layer
1 cup walnuts
1 cup medjool dates, pitted
1/3 cup cocoa powder

for frosting

1/2 avocado
3 to 5 tablespoons raw honey (you can adjust to taste)
1/4 cup cocoa powder
2 teaspoons vanilla extract
a hefty dash of cinnamon
a tiny pinch of salt

Chop the dates, walnuts, and cocoa powder in a food processor. I have learned to slowly add the dates. It won't bog down the processor and it will chop easier. Then press this crumble goodness in a pan. This is all we had to work with at the cabin. Makes it more fun right?

Then puree the avocado, cinnamon, cocoa, vanilla, salt, and honey to make the frosting.. I was SO shocked how much this tasted like chocolate. Avocado, really?? Then spread over the brownie layer.

Cover with foil and freeze for 30 minutes to an hour. ENJOY!!

I haven't made cupcakes in a while and I thought the girls would enjoy making them so we had a couple of choices Saturday night. Hey I think we earned it after 4.7 miles on a mountain.


Poor Sass was pooped but she quickly popped up and had NO problem assisting me.

I have bought so many piping bags and I HATE them.. so I have turned to sandwich bags, cut the corner, and BOOM.. you have an even better piping bag.

And that is pretty much a wrap!

We enjoyed dinner and dessert, Amber and I battled in a game of pool.. I had a pretty awesome, unexpected shot (I have no idea what I am doing in pool), I tried to hold strong til the very end but she got me..


.. We relaxed the rest of the evening and the next morning had to pack and be out by noon. We checked out a few cabins before we headed out and ate at a Mexican restaurant called Fuego's before heading for home.

I LOOOOVED my weekend with my Bestie and the girls! Thank you sooo much Amber for one of the most awesome Christmas gifts! Making memories there was so special to me and ones that I will always cherish.. I hope we can get back there sooner than later! Such a peaceful, relaxing gorgeous place! We have to get busy on our inspirations from the cabin too.
